Our 2019 Napa Valley Cabernet Sauvignon boasts aromas of black currant, boysenberry, black plum, and molasses. The finish is polished with well-rounded and soft tannins. This Cabernet pairs perfectly with filet mignon glazed in a rich balsamic reduction.

Vineyards

The fruit for our 2019 Cabernet Sauvignon was carefully selected from prime vineyards in some of Napa Valley’s best regions, including St. Helena, Oak Knoll and Rutherford. Winemaker Joe Shirley’s commitment to sourcing fruit from the best regions in Napa ensures a classic wine that showcases the essence of a quintessential Napa Valley Cabernet Sauvignon.

Harvest

The 2019 growing season offered superlative conditions with abundant rain in the spring months, saturating the soil profile. This allowed for holding off on irrigation until June. Plenty of sunshine and moderate temperatures throughout the summer led to an early harvest, with the last grapes delivered on October 31st.

Winemaking

The grapes were hand-harvested in the cool morning hours to ensure optimal flavor. At the winery, the fruit was hand-sorted, gently de-stemmed and lightly crushed. Following a maceration period to maximize color and flavor extraction and to also polish the tannins, the wine was aged in 100% French oak barrels (43% new) for 20 months.
